Main Components of Aronia melanocarpa
1. Flavonoids
The fruit of Aronia melanocarpa contains Flavonoid, mainly anthocyanins, Quercetin and their derivatives.
Anthocyanins are Cyanidin 3-O- α- L-arabinoside, Cyanidin 3-O- β- D-galactoside, Cyanidin 3-di-O- β- D-glucoside and geranium 3,5-di-O- β- D-glucoside [2].
Quercetin derivatives include hyperin, isonenenebb quercetin, quercetin-3-O - (6-O- α- L-neneneba rhamnose group- β- D-glucoside), quercetin-3-O-rutinoside, quercetin-3-O - (6-O- α- L - Arabinose group- β- D-glucoside), quercetin-3-O - (6-O- α- L-neneneba rhamnose group- β- D-glucoside).
2. Organic acids
The organic acids in Aronia melanocarpa include Gentisic acid, quinic acid, Shikimic acid, Malic acid, vanillic acid, Protocatechuic acid, 4-Hydroxybenzoic acid, Ferulic acid, P-Coumaric acid and Caffeic acid. The seeds also contain oleic acid, Linoleic acid, Palmitic acid and stearic acid.
3. Triterpenoids and sterols
Martynov and other researchers isolated Ursolic acid from the Aronia melanocarpa fruit. Aronia melanocarpa seed oil contains 0.12% sterols, mainly rape sterols β- Sitosterol and δ- Avenasterol.

| Introduction | Aronia has attracted scientific interest due to its deep purple, almost black pigmentation that arises from dense contents of polyphenols, especially anthocyanidins. The plant produces these pigments mainly in the leaves and skin of the berries to protect the pulp and seeds from constant exposure to ultraviolet radiation and production of free radicals.By absorbing UV rays in the blue-purple spectrum, leaf and skin pigments filter intense sunlight, serve antioxidant functions and thereby have a role assuring regeneration of the species. |
