Introduction

When researchers compared diets in Western countries, they observed that, despite eating more animal fat, the incidence of heart disease in France remains low. The French paradox is supposed to be caused by the preventive effects of drinking red wine on a regular basis. Molecular pathways in blood arteries are altered, reducing vulnerability to vascular injury.

Reduced activity of angiotensin, a systemic hormone that causes blood vessel constriction and so raises blood pressure.

Nitric oxide (endothelium-derived relaxing factor) production is increased.
